These savory scones with bacon, cheese and thyme are a great alternative to regular scones. I use the same basic recipe, but omitted the sugar and added some extra flavors. Replace the bacon with sun dried tomatoes for a vegetarian version (just as nice for non vegetarians).
- Ingredients for 6 to 7 scones:
- 280g self raising flour
- 1 ts baking powder
- ¼ ts salt
- 80 g butter, cold and cubed
- 1 pinch of pepper
- 1 small pinch of thyme
- 50g mature cheese, grated
- 4 streaks of bacon, pan fried and crumbled
- 4 Tbs yogurt
- 1 egg
Preheat the oven at 375°F/190°C.
Mix the self raising flour with the baking powder and salt. Use your fingers to rub the butter into the flour mixture until it has all been incorporated.
Mix in the pepper, thyme, cheese and crumbled bacon. Make a well and mix the egg and yogurt inside of it. Stir outwards to mix in the flour. Bring together, but don’t over knead.
Roll out the dough to about ¾inch/2cm thickness. Use a cutter to cut out the scones. Place on a baking sheet covered in parchment and bake for 25 minutes.
Cool on a wire rack and serve on it’s own, with butter or as a side for soup.
