A delicious and summery pasta salad with zucchini, broccolini, oven roasted tomatoes and mozzarella.
I received a jar of oven roasted tomatoes in a press package. You could substitute these with your own roasted tomatoes or fresh tomatoes.
- Ingredients serve 2
- 1 zucchini, cut into strips or cubes
- 200g broccolini
- 250g casareccia pasta or penne
- 1 Tbs mayonnaise
- 1 Tbs basil oil
- 2-3 Tbs flat leaf parsley, finely chopped
- 1 mozzarella bal (1 bal serves 2)
- 4-5 small oven roasted tomatoes or fresh tomatoes, chopped
- Freshly ground pepper
- Flavorless oil
Fry the strips or cubes of zucchini in some oil until lightly colored and softened. Leave to cool.
Blanch the broccolini for 4-5 minutes, rinse and drain well. Cut into pieces. For extra flavor you could stir fry them for a couple of minutes. Add to the zucchini.
Cook the pasta al dente and drain well. Add to the zucchini and broccolini. Leave to cool completely. The oil from the zucchini well help it from sticking. Otherwise add a tiny splash of oil.
Cut the tomatoes and add to the pasta.
For the dressing, mix the mayonnaise with the basil oil and chopped parsley. Stir through the pasta.
Serve the pasta salad with torn pieces of mozzarella on top and season with freshly ground pepper.
A very simple and delicious main or side dish!
