I first came across overnight oats via Instagram. Oatmeal that has been soaked with milk and/or yogurt overnight, combined with different kinds of ingredients. Mostly fruit or nuts.
My first attempt was a combination with cocoa and sliced banana, which I added the next morning. I’ve tried it a couple of times, but dairy based breakfasts just aren’t for me. My boyfriend however, along with many others, loves it! I stir his oatmeal breakfast together almost every evening. This is his favorite version.
- Ingredients:
- 1/2 cup oatmeal
- 1/2 cup milk
- 1 Tbs desiccated coconut
- 1 Tbs honey
- A bit of fruit, strawberries or banana
I prepare the overnight oats in a clip top jar so I can keep it sealed in the fridge. You could also use a bowl covered with plastic wrap.
Mix the oatmeal with the milk, coconut and honey. Stir wel and refrigerate. Done! The next morning you can add pieces of fruit. The Boyfriend prefers strawberries or banana.
If you prefer your oats a bit thinner, just add a bit more milk.
The variations are endless. You could replace part of the milk with yoghurt or replace it completely with a vegan option like almond milk. Add nuts, chia seeds, hempseeds or mix in some cacao powder or cacao nibs. Anything you like!
