Lemon bars have been on my “to make” list for way too long. I happened to have a big jar of homemade lemon curd in my fridge when I came across Maaike’s recipe(NL) and I just had to make it. If you don’t have your own homemade curd, you could substitute it with shop bought.
- Ingredients:
- 115 gr unsalted butter + extra for greasing the baking tin
- 100 gr sugar (50+50)
- 8 gr vanilla sugar (1 package)
- 180 gr flour (150+30)
- Pinch of salt
- 2 eggs
- 150 gr lemon curd
- Juice of 1 lemon
- Icing sugar
Preheat the oven at 175°C/350°F. Grease a baking tin and line with baking parchment. I use a brownie tin and make sure I have parchment paper overlapping the edge. This makes it easier to remove the lemon bars from the tin.
Melt the butter on a low heat and mix with 50 grams of sugar and the vanilla sugar. Stir well and add 150 grams of flour.
Mix into a firm ball and spread over the bottom of your tin. Use the back of a spoon to level it out.
Bake for 30 minutes until golden in the center of the oven.
Squeeze the lemon. Mix the remaining 50 grams of sugar with 30 grams of flour in a bowl. Whisk through the eggs and add the lemon curd and lemon juice. Stir well.
Remove the tin from the oven. Turn down the heat to 150°C/300°F.
Pour the lemon mixture in the tin and bake for another 20 minutes.
Let the lemon bars cool in the tin and carefully remove from the tin with the help of the baking parchment. Cut into squares and dust with icing sugar just before serving.
