Filled French toast covered in a layer of sugar and cinnamon, what’s not to like? I first stumbled upon these at Cinnamon Spice & everything nice via Pinterest. The recipe is super simple, but I just had to share it.
My mom used to make me French toast with pan fried apple with cinnamon and sugar. Usually I have them fairly plain with just some sugar and cinnamon. I just had to try these roll ups though. They look wonderful and you can fill them with just about anything.
I used mascarpone cheese and cherry jam, but you could also use fresh fruit or chocolate spread.
- Ingredients:
- 6-8 slices white bread
- 2 eggs
- 3 Tbs milk
- Mascarpone cheese
- Jam or other filling
- 1/3 cup sugar
- 1/2 ts ground cinnamon
- Butter for frying
Trim the crust and flatten the sliced bread with a rolling pin.
Mix the sugar and cinnamon in a shallow bowl. Mix the milk and eggs in a separate bowl.
Place the filling on the bread in a narrow line and roll without pinching or pushing down.
Heat a skillet with a bit of butter.
Coat the rolls with the egg and place them in the pan seam side down. Cook until golden on all sides.
Remove from the pan and roll into the sugar and cinnamon mixture.
