A simple and delicious lunch. Corn salad with papadums and some left over tzatziki.
There’s not much to it. Toss a couple of ingredients together and you have a wonderful salad for lunch, as a starter or as a side dish. Together with the tzatziki it’s a great addition to your barbecue.
- Ingrediënten 1-2 servings:
- 150-200gr Corn from a can
- 1 or 2 tomatoes
- 1 avocado
- Pepper and salt
- Olive oil
Drain the corn, cut the tomato and avocado into pieces and toss it all together with a bit of olive oil and pepper and salt.
Serve with some papadums and a bit of homemade tzatziki.
It shouldn’t even be called a recipe right?
You can buy the papadums ready made. If you can’t find papadums, you could replace them with tortilla chips for a bit of crunch.
