Corn fritters, I used to make them regularly about a year ago. Somehow I forgot about them. Such a shame, because they are soo good! Luckily I remembered them. With just a few ingredients you can make this delicious snack in no time.
- Ingredients for about 13 corn fritters:
- 1 jar of sweet corn (230 gr drained, about 1 1/2 cup)
- 1 Green onion chopped
- Salt and pepper
- 3/4 cup Flour
- 3/4 cup Yogurt
- 1 ts baking powder
- Optional: chili flakes or a chopped red chili
- Optional: 1/2 ts curry powder
- Flavorless oil for shallow frying
Drain the corn and add the chopped green onion. Stir in the flour and baking powder. Add chili flakes or red chili, salt and pepper and curry powder to taste.
Add the yogurt and stir a couple of times. You’ll get a fairly thick batter, that holds it shape slightly.
I use a fairly small frying pan for shallow frying, so I don’t need to use a lot of oil. Heat the pan on a low to medium heat. The oil doesn’t need to get too hot. When frying the corn fritters, it should only bubble lightly.
Take a slightly heaped tablespoon and use another spoon to slide the batter into the oil. Press the top a bit to flatten the fritter. Shallow fry these a couple of minutes each side until golden brown. Drain on paper towel.
Here you can see the soft bubble of the oil. Wait a couple of minutes before turning the fritters, so they don’t fall apart. I use a fork and a spatula to carefully flip them without splashing the oil.
Delicioud corn fritters. We eat them usually when cold as a snack or with a salad. They would also make great finger food for parties.
Corn fritters with a salad of feta, olives, small tomatoes and a mustard, white balsamic vinegar and olive oil dressing.
You could replace the green onion with a yellow onion cut into quarter rings. I sometimes replace half of the flour with gram flour/ chickpea flour. For me the flavor of the gram flour is a bit too strong to completely replace the regular flour.
Using baking powder isn’t necessary, but it does make the fritters a bit lighter.
