This is a super easy side dish, but I just had to share it. I love it especially with hamburgers, pulled pork or Sloppy Joes.
I never measure the cabbage or carrot. Most of the time I eyeball the amount depending on how many servings I plan on making.
- Ingredients:
- White cabbage, in thin strips
- Carrots, julienne or sliced as thin as possible
- 3 Tbs mayonnaise
- 3 Tbs thick yogurt
- 1 Tbs cider vinegar
- 1 Tbs mango vinegar
- Salt and pepper
Mix the mayonnaise, yogurt, cider and mango vinegar. Season to taste with salt and pepper.
Mix the cabbage and carrots. I usually use more of the cabbage. Drizzle with the dressing and combine until the cabbage and carrots have a thin coating. You don’t always need to use all of the dressing.
If you don’t have mango vinegar, replace both of the vinegars with 1 tablespoon of lemon juice (in total). Bring it back with a pinch of sugar if the dressing is slightly too sour.
This is a very basic coleslaw, you could also add raisins and strips of apple.
